Bountiful Basket -- Fruit & Veggies
Bountiful Baskets is veggie/fruit co-op that is a $15 deal. No longer a secret, Bountiful Baskets is a Southern Utah craze. Every week fresh fruits and veggies are delivered from Arizona to drop off sites throughout Southern Utah and then the produce is organized and handed out by co-op volunteers. Each week participants go online to order their basket for $15 and each week they get $20 to $40 worth of high quality veggies and fruit straight from the same growers who supply the grocery stores. It is a steal of a deal. In addition they offer specials every week. Their whole grain/no preservative bread is a favorite.
We are telling you how to get in on this produce deal and for those of you who are already a Bountiful Basket customer, we are throwing in a recipe made from this past week's basket by our Featured Utah Food Blogger Pantry Eats.
How you do it. Go to http://www.bountifulbaskets.org/ Register and login. ( you will get all kinds of directions via e-mail)
Every Monday login to bountiful baskets at 4 p.m. (Some weeks fill up fast so make sure you get online right at 4 p.m.) You have until Tuesday night but usually, the basket limits are full by Monday.
Then click on Co-Op offerings. Find the Utah basket and a location near you. Purchase your basket and any other extras.
Show up at your pick-up site on time. If you do not show up within an half hour of pick-up time your basket will be donated to a good cause. Show up with a big basket that is easy to carry. There will be a lot of heavy food to carry home.

A Bountiful Basket Recipe from Pantry Eats
Blackberry Spinach Salad with Raspberry Vinaigrette
Quantiites depend on servings needed.
1 carton of blackberries
Spinach, rinsed and stems removed, torn
1 cucumber, sliced
1 pear sliced thin (canned pears are delish in this too.)
1 or 2 slices of Bountiful Baskets whole wheat bread torn into bite size crumbs
swiss cheese (to taste)
Raspberry vinaigrette ( click here to get a recipe to make your own)
Layer ingredients on top of spinach and top with a raspberry vinaigrette.
