Grandma Tobler Bakery's Pumpkin Roll
Grandma Tobler's Bakery in St. George dishes up some amazing baked goodies to Southern Utah. Owner and operator Lark Taylor goes to work every day in honor of her mother who taught her to cook. Her recipes in her bakery are all about tradition and this month she demos how to make a holiday favorite: The pumpkin roll.

Grandma Tobler's Pumpkin Roll recipe:
3 eggs
1 cup sugar
2/3 Cup of pumpkin
1 tsp lemon juice
3/4 Cup flour
2 tsp cinnamon
1 tsp baking soda
1 tsp ginger
1/2 tsp salt
1/2 tsp nutmeg
Filling
1 lb powdered sugar
3 oz cream cheese
1 Cube butter
Whip filling ingredients until fluffy. See video
Pumpkin Roll Directions:
Whip eggs on high until frothy. (about 5 minutes)
Gradually add sugar.
Turn to 1 on mixer and add pumpkin and lemon juice. Mix until combined.
In a separate bowl combine dry ingredients.
Add dry ingredients to pumpkin mixture.
Line a jelly roll pan with parchment paper. Spray with nonstick spray.
Spread mixture evenly into pan.
Bake 15 minutes at 375 degrees farenheit.
Roll up cake while still hot. (roll with parchment paper)
Let cake roll cool completely.
Unroll and spread with filling. Carefully roll cake. Can be sliced and eaten or chilled and eaten later.
